Mother's Day Sugar Cookies

Countdown to Mother's Day

Mother's Day in the UK is always on the 4th Sunday in Lent. That is the day, when Christians visit their Mother Church. That's why this day is also referred to as Mothering Sunday.

This year I have decided to start my first very own cookie project. It starts on 1st March all the way up to 22nd March when Mothering Sunday takes place.

Every Day I will add one video that will lead up to a full 22 cookie videos and a great cookie platter ready to be served on Mother's Sunday.

I am so grateful to have been gifted beautiful Sugar Sprinkles to perfect my cookies by

Happy Sprinkles

Their Range of Sprinkles is incredible and best of all - They are shipping worldwide!

Check out their colourful mixes for an extra sprinkle of happiness to your bakes.

These cookies are posted in a way that only in the end you can see what it's all about. Recipes on the bottom of the page! Happy Mother's Day!!!

This little Spring Wreath has very special sprinkles on top. The 'baubles' are an extra feature in Happy Sprinkles mix 'Celebrations' and are filled with chocolate. I don't know how they do it. The sprinkles are light and crunchy and still very light, when you put them onto the cookie. Very delicious and such an eyecatcher for any cookie.

As you can see, I have flooded the cookie with a teal coloured icing. At first I've attached a few fondant flowers that I have prepared upfront. After they have come out of the fridge I have coloured them with an edible pen in rose colour and some pearl white shine on top. After that I have attached the bauble Sprinkles. Simple but very efficiantly done.

To make the D was very special. My light pink royal icing had just about the right consistancy.

As I am not an experienced Cookie Creator (just an enthusiastic one) I sometimes struggle to get my icing consistancy right. But this one was perfect and it was such a joy to ice my little letter cookie!

I have outlined and flooded my D cookie and let it dry. Then I applied white lines and attaches sprinkles from Happy Sprinkles and their mix Pastel Summer which features beautiful pastel coloured butterflies that really give that Spring feeling.

I am very happy with the outcome. The D so far is my favourite cookie in this project.

For the A in Day I have flooded half of the cookie with green royal icing. I have let it dry and flooded the upper part of the letter with light pink icing.

After both parts were fairly dry I have taken green icing and created lines on the green part of the letter cookie.

Beforehand I had created little flowers with Fondant icing. I have used silicone moulds that I have filled with the fondant icing and put in the fridge for them to harden.

After they were solid enough to handle I have attached the little icing flowers to the cookies on top of the lines.

Finally I have painted the bottom of the fondant flowers with a shiny pearl white pen to give it that extra little edge.

First Letter for my Mother's Day Sugar Cookie Countdown.

I have outlined the cookie with white royal icing and immediately flooded the cookie.

After letting the icing crust over I have created green lines on top of the white icing and put dots on top and underneath.

Straight after I have applied blue, green and silver coloured tiny sprinkles by Happy Sprinkles Mermaid Secrets mix to make the dots on the cookies extra special.

The second post in my Countdown to Mother's Day Sugar Cookie project is a blue love heart with rather runny royal icing. It took me quite a while to understand how to treat my icing right. And now, even when most of the time I get it right, it sometimes still turns out too thin. Happens to the best of us :-)

This is the icing recipe I go to every time I make sugar cookies. The secret is then in how thin you dilute it before decorating the cookies:

45ml Water

250g Icing Sugar

8g Egg White Powder

I'm mixing all of the ingredients together in a stand mixer until a thick glossy paste has formed. I devide the mixture into any colours I need and colour it with food colouring. Then I add just a few drop of water to receive the best consistency to ice the cookies.

The first post is a pretty Butterfly. I have made a batch of cookies in different shapes with this recipe:

  • 350g wholemeal flour
  • 100g selfraising flour
  • 125g granulated sugar
  • 125g salted, diced butter
  • 125g golden syrup
  • 1 large egg

Mix all the ingredients until a doughball has been formed and put the dough in the fridge for 30min.

Cut out your cookie shapes and bake them in the pre-heated oven at 170° C for 14 - 18min until golden brown.

You'll see that some of my cookies came out more like caramel colour brown, but that's ok. They hold together very well even when rolled out very thinly.

Let them cool and then the fun can begin.

For this butterfly I've used yellow icing and Happy Sprinkles Pastel Summer
